LEARNING | Development Boards

Hi,
I want to buy a development board to improve my skills in embedded & analog electronics area.
I am completely new to embedded world. I wanted to become a pro in embedded programming. So the development board should help me in learning the embedded programming.
I want to learn about different protocols(like SPI, I2C, I2S, LIN, etc.). The board should support these and I wanted to buy some of the sensors which support these protocols so that I can use them to try out my understanding on this. If the board itself have the sensors it is great.
I want the board to be supported by ARM IAR. Which means I should be able to do debug using the Arm IAR.
Also I wanted to learn about ADCs, DACs. It would be great if the board can help in doing that.
The board should use Arm processors.
The board vendor should have proper documentation.
