I can simulate ARMv7 assembly code with Keil, however, I cannot simulate ARMv8. Do you know if that is possible?

What do you mean by simulating the ASM code ?All the devices that are supported with simulated features are listed in below link:

I use Keil for teaching Computer Architecture. For Labs, students simulate ASM code with Keil. This can be done configuring the Keil debugger for using the simulator. This allows my students to run ASM code without having a physical device. Using this approach, we need to select target device among the ones available in Keil software pack. The problem is that none of the target devices in Keil have ARMv8 architecture, so we cannot simulate ARMv8 code, only ARMv7.
Why not ?There are examples for Cortex-M23 and Cortex-M33 which are listed in Pack Installer.
Other than that some fast models based examples are listed in Pack Installer based for Trustzone Armv8-M
