Hello, I read it as a CPU that obeys the Armv7-M architecture, without going into any further detail. Similarly you can see this (for example) for the Cortex-M4, and the Cortex-M33 shows Armv8-M mainline...

I don't know, but might simply down to the person who wrote the TRM vs created the diagrams. The definitions and distinctions between processor, core and CPU seem to vary in time/company/setting. That...
