You might be able to buy a copy of the Google search engine cache on CD-ROM.
I wouldn't bother looking for the floppy disk release though.
A "Good" Semester Project would be one that fits your course's semester project requirements well, and matches your skill level.
Nobody, other than your teacher(s), knows what course you are doing, or your skill level.
Therefore nobody, other than your teacher(s), knows what would be a "Good" Semester Project for you.
So, really, you need to be discussing this with your teachers.
Do you have some local infrastructure that is lacking, or would benefit from a decade old processor rather than a 3-4 decade old one? Any IoT applications? Internet or cellular connectivity? Rain gauge, river level, water treatment plant, dissolved oxygen monitor, industrial process, weight scale, thermostat?

What in particular on the LPC21xx device was so interesting. There should be a pin to pin compatible LPC117xx device.
