The Dallas 80C320 does not have any internal Code memory (ROM, EPROM or FLASH) and therefore no programming voltage. You will need to store your code in an external part if you use this device. Dallas is coming out with a new part, the DS89C420 with 16K of internal FLASH (and up to 50 MIPS performance), which you should look at if you need the speed.
Whenever you create a Project in uVision2, you automatically get an entry for the device datasheet in the 'Books' tab of the Project window. It's the book titled "Data Sheet!" Unfortunately, in the case of the 80C320, uVision uses the wrong filename! The correct file is:
\Datashts\Dallas\80c320up.pdf
