Working on the Nuvoton microcontrollers is a good idea. They have very affordable products.
If you try to include the Cortex Microcontroller Software Interface Standard (CMSIS) library in your development work, it means your code will be more easily portable to other MCUs working on the ARM Cortex-M CPU family. The Software Development Tools group will be able to address your questions around CMSIS.
The peripherals may work differently on the NUC140 than on other silicon vendors, but the knowledge you will have acquired on Nuvoton products will be reusable on any other microcontroller.
