People having been measuring humidity for millennia - it's not a new or novel thing. Therefore you should be able to find descriptions of the well-established techniques for measuring humidity in any standard textbook or reference - and, of course, on the internet.
Rather than make a humidity sensor completely from scratch, do you really mean that you want to use one of the many commercially available sensors, and connect it to your 8051?
