The 8051 family of micros is dominating the micro controllers market ?
I ask this as compared to the ARM based micros and others .

It was strong.
Not anymore, since the number of transistors makes so little difference in price or in power consumption making it hard to compete with ARM chips.
A large percent of new designs goes for ARM solutions, driving 8051 to niche use - so the 8051 might be integrated as an IP core in a FPGA or ASIC.
another example of "the '51 is still alive" is that SILabs just released the EFM8 series as "IoT sensor processors"

In which market? The weight scale market, or things requiring high resolution graphics and speed?
They are in a lot of things, but I wouldn't make a career out of them.. Learn how to use micro-processors/controllers in general.
Probably a bunch of them in phones/tablets, doing menial tasks like power management/control, initializing/sequencing more complicated parts, or short range radio links.
