    Do you think there must be a special brand/model of microphone for a LPC1768?

    All you need is to get a signal level of suitable amplitude for the LPC1768 ADC. And you need to DC-shift the signal to somewhere in the middle of the ADC measurement range, since the ADC of the microcontroller only samples positive voltages.
