I'm using uVision 5.25 and I can see that inactive code, #ifdef-ed out for example, is grayed out. It's a great feature but in some cases I'd like to switch it off and look through the #ifdef-ed code.
Is there an option to turn of the graying out?

In MDK v5.25 it is still impossible to disable this feature yet. But a way to toggle it will be added in the next release version
Ha ha - this feature has been requested for years and, as soon as you implement it, along comes someone asking how to disable it!!
