Suggest examples and part for I2C or SPI communication

Hello - I am new to microprocessors but comfortable with C and FPGAs. I would like suggestions on part/evaluation board and with examples for reading I2C or SPI data from external IC and then sending that across serial communications to PC for evaluation or maybe evaluate in a debugger? I really do not need to do anything else with the microprocessor.

    I do realize I2C and SPI are common.
    Just to be clear - I would like to get an evaluation board that has example(s) for the bus
    I am running the uVision 5.11.1.0 and would like to accelerate the development as much as possible.
