Interfacing an ADC with an 801

Hi

I am going to interface an ADC onto an 8051. Could someone please advise on wether i should use a serial or parallel ADC. Which is easier to program and take values from.
The basic idea will be to use an 8 bit ADC to take in numerous voltage values which is internally multiplexed to give a digital output of the desired signal.
Should the output of the ADC be serial or parallel into the 8050. Which is easier more practicle (and less time consuming to program :-) )
