Is there any way to make the pack installer to use my selected
chip? Every example I make is set up for the stm32f207 and I have the
205 selected. This works for the most part but all the pin names are
wrong and it makes thing very difficult.

All demonstrating STM32F200 example projects are addressed to the
STM32F207.
There currently is no dedicated STM32F205 example project offered by
the PackInstaller.
A customer specific transfer from STM32F207 to STM32F205 requires
adaptations with reference to the device specific manual.
